Phytochemical Section Arafa, Raafat [1]. Aglycone production from Egyptian Hommad. Aglycone some molecules (such as anthocyanidins or isoflavones) can exist with or without a sugar group attached to them. When they are without the sugar group, they are known as aglycones ('a-' means 'without'). When they have the sugar group, they are known as glycosides. Quercetin as flavonoid aglycone plant natural product was isolated from Egyptian Hommad (Rumex dentatus subspecies dentatus). That was carried out via serial chemical process of extraction, isolation and identification using recommended high standard techniques. Three new quercetin derivatives were synthesized as 5, 7,3',4'-tetraacetyl flavone, 4-phenyl hydrazone-3,5,7,3',4'-pentahydroxy flavone and 8-nitro-3,5,7,3',4'-pentahydroxy flavone. Antibacterial activity of natural quercetin and new synthesized quercetin derivatives were carried out using different ppm concentration against some food-borne pathogenic bacteria as Eischeria coli 0157:H7, listeria monocytogenes, Bacillus cereus and staphylococcus aureus.
